Grape variety: 100% Nebbiolo. A native Piedmont grape with a late harvest period, recognized for its quality since the ancient Roman epoch.
The wine obtained is characterized by extraordinary refinement, exceptional ageing capacity and strong tannin content.
Municipality: Serralunga d’Alba
Total extension: 16,450 square metres
Selection in the vineyard: In stages, carried out three times in the 45 days before the start of the harvest
Winemaking: Stalk removal, pressing and room temperature maceration for 2 days. Duration of maceration in total 20 days. Controlled temperature fermentation at 28 °C.
Clarification: Fresh egg white
Filtration: With inert material
Ageing: 30 months in 30 hectolitre oak barrels from Slavonia
In-bottle refinement: 10 months
Serving temperature: 17°C
