Vineyard Features:
These high- and mid-hillside vineyards, located at 300–350 metres above sea level, face south-east and south-west on soils rich in clay and calcareous marl.
Wine-Making Process:
Fermentation is carried out traditionally in stainless steel vats at a controlled temperature of 25°C for 8–10 days. Malolactic fermentation then takes place in concrete tanks before the end of November.
Ageing:
Mirafiore Dolcetto d’Alba is aged in large and medium-sized oak barrels (20–140 hl) for two months before bottling, followed by a further six months of bottle ageing before release.
Tasting Notes:
Deep ruby red with violet highlights. The bouquet is fine and fruity, with persistent and well-defined notes of violet, blueberry, black cherry, and rosemary. On the palate, it is pleasantly dry, full-bodied, and soft, with gentle tannins and a delicate almond finish.
Food Pairing:
Excellent with hot starters, pasta dishes, simple meat dishes, and fresh or medium-aged cheeses.
