Breeding: Guyot system (approximately 5,000 vines per ha)
Production Area: Madonna di Como, Alba, Piedmont, Italy. The vineyards sit approximately 500 metres above sea level with east/south exposure and calcareous, clay-rich marl soils.
Vinification: Fermentation takes place for approximately 15–20 days at a low temperature of 17–18°C. Most of the wine is fermented in stainless steel, while approximately 20% is fermented in 1,000-litre oak barrels.
Ageing: 6 months on the lees, followed by 6 months in stainless steel tanks and a further 2 months in bottle.
Colour: Straw yellow with attractive greenish reflections.
Aroma: Fresh and expressive, with aromas of yellow fruit and delicate yellow flowers complemented by a distinctive mineral character.
Taste: Fresh, fruity and beautifully balanced, with lively acidity, an elegant texture and a clean mineral finish.
Food Pairing: Excellent with seafood, fresh fish, sushi, ceviche, shellfish, goat cheese and lightly spiced dishes.
Serving Temperature: 6–8°C.
