An uttermost elegant 100% Pinot Noir (vinified in Blanc) with a rich body and pronounced sentors of peaches, pears, white flesh fruits, jasmine flower. The grapes, at the perfect stage of ripeness, are gently pressed very soon after picking and are fermented in steel vessels at a controlled temperature of around 18C. The base wine used is only Pinot Nero and is single-vintage but comes from different vineyards. The wine is then left to age with its own yeasts for at least 2 years.
Grapes: Pinot Noir 100% (straw yellow colour)
Wine Making: When they become fully ripe, the grapes are picked by hand extremely quickly and pressed gently. The most is kept at 8°C for one day and then at 16-18°C until the fermentation is over.
Ageing in the bottle: 24 months.
Bouquet at the nose: Complex and firm with hints of dried fruit, hay and honey.
Taste: Full and elegant, with distinctive red berries notes: Pinot Noir at its best.
