Grapes: 60% Cabernet Sauvignon, 30% Merlot, 10% Petit Verdot
Production Area: The Saffredi vineyards lie near Pereta in the heart of the Maremma. They sit around 280 metres above sea level and benefit from cooling Mediterranean breezes. In addition, fresh nights help preserve acidity and aromatic intensity.
Winemaking: The team carefully selects the grapes in the vineyard and cellar. Fermentation takes place in stainless steel at around 26°C. The wine then remains on the skins for 30–45 days. As a result, it develops deep colour, concentrated flavour and fine tannins.
Ageing: Saffredi matures for 18 months in French oak barriques, with 70% new oak. Further bottle ageing allows the fruit, oak and tannins to integrate beautifully.
Organoleptic Evaluation and Food Pairing: Deep ruby red with layers of black cherry, blackberry, cassis and blueberry. Notes of Mediterranean herbs, spice, tobacco and subtle chocolate add complexity. The palate is rich and concentrated, yet fresh and polished. Fine-grained tannins provide structure, while the finish is exceptionally long and elegant.
Excellent with premium beef, grilled or roasted red meats, slow-cooked lamb, game and mature cheeses.
