Appellation: Bianco Toscana IGT
Grapes: 70% Sauvignon Blanc, 25% Petit Manseng, 5% Traminer and Semillon
Production Area: Produced in Tuscany from the Pian di Fiora vineyard in Pereta and the San Vittorio vineyard in Scansano. These sites lie in the Maremma, an area well suited to producing fresh and aromatic white wines.
Soil: The two vineyard sites have distinctly different soils. Pian di Fiora has tuffaceous soil with abundant skeleton, rich in alabaster with a small amount of chalk. San Vittorio features clayey silt soils with quartz and rocks of magmatic origin. This diversity contributes complexity and mineral character to the wine.
Winemaking: The grapes are destemmed and crushed before a short maceration of no more than four hours. They are then gently pressed. Alcoholic fermentation takes place in stainless steel tanks to preserve freshness and aromatic character.
Ageing: The wine matures for five months in stainless steel tanks. Part of the cuvée ferments for 25 days in second-use 500-litre tonneaux. The wine remains on its fine lees throughout the entire maturation period until bottling.
Organoleptic Evaluation and Food Pairing: Bright straw yellow with expressive aromas of freshly cut grass, elderflower, mango, green apple and white nectarine. The palate is fresh and juicy, with persistent citrus fruit flavours supported by an attractive mineral background.
Excellent with seabass, pesto pasta, seafood, grilled fish, shellfish and fresh Mediterranean dishes.
