Exotic Nerello Mascalese Metodo Classico from Etna, Sicily.

It opens to a peach, raspberry-pink color and crisp transparency. You get a big sense of the variety here with wild berry, rose and sharp mineral tones. Aged aromas of caramel and candied orange peel also appear with menthol herb and dried basil.

Harvesting method: Manual in crates and before the complete maturation

Pressing: De-stalking, short maceration in pneumatic presses and gentle pressing

Decantation: Chilling of the must and static decantation in isolated steel tanks

Fermentation: In steel tanks at a controlled temperature (14°C) for about 20 days

Refining: In steel tanks for 7-8 months

Prise de mousse:  Takes place in springtime after the vintage adding saccharose and selected yeasts. The bottles are closed with crown caps including a “bidule” and transferred to the cellar underground for the aging in big piles.

Aging in bottle: On the yeast for a variable period of 2 and a half until 3 years

Remuage: With gyropalettes

Dégorgement: The freezing of the neck, the removing of this iced part and the dosage are carried out by semi-automatic machines. The dosage consisting of a small quantity of saccharose (3-5 gr/l) helps to balance the acidity
