Grapes: 100% Pinot Grigio
Vineyards: Valle di Cembra, Trento
Soil: Porphyritic loam, formed of fluvial and alluvial deposits
Vine training system: Guyot system, simple Trentino split pergola
Vinification: Manual harvesting in mid-September. Soft pressing of the whole grape, static decantation of the must. Fermentation at a controlled temperature in stainless steel tanks
Aging: 5–6 months on the lees
Tasting notes: Brilliant golden color. Elegant varietal aroma of ripe fruit with hints of pear and yellow peach. On the palate it is refined, harmonious and well balanced, with distinctive minerality and a return of ripe fruit
Pairings: From pasta with elaborate sauces, to egg dishes, from boiled chicken to small sea fish
