Region: Toscana, Italy (Maremma)
Grapes: 100% Cabernet Sauvignon
Vineyard Features:
Fontecanese is sourced from a tiny, meticulously selected cru within the Castello di Montepò estate in Maremma, Tuscany, located at approximately 350–380 metres above sea level. The vineyard sits on galestro-rich soils (rocky schist and clay), with excellent exposure and ventilation, allowing for slow, balanced ripening and exceptional concentration.
Wine-Making Process:
The grapes are hand-harvested and fermented using native yeasts to preserve the purity of fruit and terroir expression. Fermentation takes place under controlled conditions to extract structure, colour, and aromatic complexity while maintaining balance.
Ageing:
Aged for approximately 24 months in French oak barrels, followed by extended bottle ageing of around 12–16 months before release, ensuring depth, integration, and ageing potential.
Tasting Notes:
Deep and complex, with aromas of cassis, black plum, blackberry, and wild herbs, alongside notes of tobacco, cedar, and dark chocolate. The palate is powerful yet refined, with concentrated dark fruit, fine tannins, and a long, structured finish with hints of spice and earthy minerality.
Food Pairing:
Perfect with grilled red meats, lamb, game, slow-cooked dishes, and aged cheeses.
Alcohol:
Approx. 15% vol.
Serving Temperature:
16–18°C
