This barrique-aged, 100% Carignano cru is a real star and terrific value. It is lush, full of extract and body, with ripe, chewy fruit, supple texture and noble tannins; it is also extremely cellar-worthy.

VINEYARD CHARACTERISTICS
From pre-Phylloxera vineyards in Basso Sulcis (lower Sulcis); medium-textured soil with sand and clay.
VINIFICATION AND AGING
Once de-stemmed and pressed, the grapes ferment and macerate for 12-14 days in temperature-controlled steel tanks (25-28 °C). During this period, frequent pumpovers take place, favoring the release of noble tannins into the wine, something bush-trained Carignano is particularly known for. After malolactic fermentation, the wine is racked into small (fine-grain) French oak barrels of first or second use for about 10-12 months. During this time, they go through biochemical, chemical-physical and organoleptic evolution. The contact with glass allows for the early development of the bouquet. 8-12 months in barrique (first or second use) and at least 6 months in bottle.
TASTING NOTES
Almost impenetrable ruby red. Intense fruity notes of blackberry, blueberry, vanilla, myrtle, leather and licorice on the nose. Ample, velvety palate with excellent structure, and a lengthy aromatic finish; full-bodied.
SERVING SUGGESTIONS
Best served at 14 -16 °C (57.2 – 60.8 °F). Red meat, wild boar, roasted pork and aged Sardinian Pecorino cheese
