Appellation: Trentino DOC
Grapes: 100% Chardonnay
Production Area: Produced in the Avisio Hills of Trentino, where Chardonnay has been grown for more than a century. The vineyards sit around 370 metres above sea level with west and south-west exposure. Warm daytime sunshine helps the grapes ripen, while the Alpine climate preserves freshness and aromatic character.
Soil: The vineyards are planted on sandy-loam soils formed from porphyritic glacial sediments. These well-drained soils help produce Chardonnay with excellent freshness, balance and mineral character.
Winemaking: The grapes are harvested by hand in early September. After gentle pressing, the must undergoes static clarification. Fermentation then takes place in stainless steel tanks at a controlled temperature of around 20°C. This approach preserves the Chardonnay’s fresh and vibrant fruit character.
Ageing: The wine remains on its lees for approximately 5–6 months before bottling. This adds texture and complexity while maintaining freshness and purity of fruit.
Organoleptic Evaluation and Food Pairing: Pale straw yellow with attractive green highlights. The bouquet is fresh and inviting, with notes of Golden apple and pineapple. On the palate, the wine is full, fresh and beautifully balanced. The finish is clean, harmonious and pleasantly persistent.
Excellent with prawns, seafood, fish risotto, ricotta and spinach ravioli, grilled fish, light pasta dishes and fresh cheeses. Serve at 10–12°C.
