Vineyard Position: South to south-east facing, approximately 270–330 metres above sea level
Vineyard Size: Approximately 6.75 hectares
Soil: Calcareous and clay-rich marl, rich in rocky mineral material. The distinctive Liste vineyard was formed through the erosion of soils above it millions of years ago, creating a complex mix of macro- and micro-elements that contributes to the wine’s remarkable complexity and longevity.
Breeding: Modified Guyot system
Planting Density: Approximately 4,000 vines per hectare
Harvest Period: First two weeks of October
Vinification: Spontaneous fermentation takes place without added yeasts for approximately 12 days, beginning at around 22°C and reaching 29°C. This is followed by an extended 40–60 day submerged-cap maceration at approximately 29°C. After racking, malolactic fermentation takes place for around 15 days at a constant temperature of approximately 22°C.
Ageing: The wine matures for approximately four years in large Slavonian oak barrels, followed by a further six months of bottle ageing. This long, traditional maturation develops complexity and structure while preserving the distinctive character of Nebbiolo and the Liste vineyard.
Alcohol: 14.5% vol.
Colour: Medium ruby red with garnet-orange reflections.
Aroma: Elegant and complex, with rose petals, wild strawberries, dried lavender, mint and spice, alongside subtle savoury and earthy nuances.
Taste: Powerful yet refined, with impressive depth, vibrant acidity and finely structured tannins. Fresh red fruit and savoury spice lead into a persistent, mineral finish. A wonderfully traditional and age-worthy expression of Barolo.
Food Pairing: Excellent with braised or roasted red meats, beef, game, truffle dishes, traditional Piedmontese cuisine and mature cheeses. Borgogno also recommends richer international dishes such as goulash, black cod and slow-cooked beef.
Serving Temperature: 18°C.
Ageing Potential: Exceptional. The 2019 is a structured and long-lived Barolo with significant potential for further development. Jeb Dunnuck gives a drinking window of 2026–2050, while Wine Enthusiast suggests 2028–2040.
