Variety: 100% Nebbiolo
Production Area: Fossati MGA, Barolo, Piedmont, Italy. A historic single vineyard of approximately 3.2 hectares with south-east exposure, situated between Barolo and La Morra.
Soil: Calcareous and clay-rich marl with a slightly sandy composition. The presence of sand helps give Fossati its distinctive floral character and expressive red-fruit aromas.
Breeding: Archetto variation of the traditional Guyot system, approximately 4,000 vines per hectare.
Harvest Period: End of September to beginning of October.
Vinification: Spontaneous fermentation with indigenous yeasts takes place in concrete tanks for approximately 12 days. This is followed by an extended submerged-cap maceration of around 40 days. Malolactic fermentation takes place after racking.
Ageing: 4 years in traditional 4,500-litre Slavonian oak casks, followed by a minimum of 6 months refinement in bottle.
Colour: Elegant ruby red developing characteristic garnet reflections with age.
Aroma: Complex and beautifully expressive, with dark cherry, wild berries, dried rose and herbs, complemented by mint, orange zest and subtle savoury notes.
Taste: Generous and refined, with layers of red and dark berry fruit, liquorice and tea-like savoury notes. Supple, finely structured tannins are balanced by vibrant acidity, leading to a long and elegant finish.
Food Pairing: Perfect with slow-cooked and roasted red meats, beef, game, rich Piedmontese dishes, truffle and mature cheeses.
Serving Temperature: 18°C
Ageing Potential: Excellent. The 2019 vintage has the structure and balance to continue developing beautifully for decades.
