Variety: 100% Nebbiolo
Production Area: Barolo, Piedmont, Italy – produced from grapes grown across Borgogno’s historic vineyards, including Liste, Fossati, Cannubi, Cannubi San Lorenzo and San Pietro delle Viole.
Vineyard Position: South and south-east facing, approximately 290–370 metres above sea level
Soil: Calcareous and clay-rich marl
Breeding: Archetto variation of the traditional Guyot system
Planting Density: Approximately 4,000 vines per hectare
Harvest Period: October, harvested by hand
Vinification: After destemming and crushing, spontaneous fermentation takes place in large concrete tanks at controlled temperatures of approximately 22–28°C for around 15 days. This is followed by traditional submerged-cap maceration in concrete for approximately 20 days, during which malolactic fermentation also takes place.
Ageing: More than 24 months in large Slavonian oak barrels, followed by further refinement in concrete tanks before bottling.
Colour: Ruby red with characteristic garnet highlights.
Aroma: Elegant and expressive, with raspberry, cherry and fresh red fruits accompanied by rose, lavender, mint, liquorice, wild herbs and delicate spice.
Taste: Refined and beautifully balanced, with vibrant acidity, polished Nebbiolo tannins and generous red fruit. Structured yet approachable, leading to a long, savoury and elegant finish.
Food Pairing: Excellent with braised and roasted meats, beef, game, rich Piedmontese dishes, truffle and mature cheeses.
Serving Temperature: Approximately 18°C
Ageing Potential: Excellent. The outstanding 2021 vintage combines freshness, structure and balance, making it suitable for extended cellaring.
