Appellation: Etna D.O.C. Rosso

Grape varieties : Nerello Mascalese (90%), the indigenous red grape of Mount Etna, sweet and tannic. Nerello Cappuccio (10%), a variety grown on the volcano for centuries, sweet and mildly tannic

Production area: Rovittello (Castiglione di Sicilia), on the northern slope of Mount Etna Altitude 750 m a.s.l.

Climate: Mountain and high hill climate, humid and rainy in the cooler season, with high ventilation and luminosity and very significant temperature excursions

Soil: Sandy, volcanic, rich in minerals, with sub-acid reaction

Vine density: 9,000 -- 10,000 vinestocks per hectare

Yield per hectare: 6,000 kg/ha

Age and training system of vine: Ranging from 80 years to pre-phylloxera, trained with the traditional free-standing bush (“alberello”) system

Vinification: Grapes are hand picked during October and softly pressed. Fermentation occurs at a controlled temperature of c.25°C in stainless steel vats, with 20-21 days long maceration, using patented selected indigenous yeasts. The maturation occurs in large barrels of French oak for about 15 months and then in stainless steel tanks Refining In the bottle for 9-12 months

Color: pale, ruby red

Scent: ethereal, intense, delicate with hints of ripe fruit, chestnut flowers and noble wood

Taste: elegant and fine tannins, balanced, remarkably persistent

Alcohol content: 13,5 %

Serving temperature: 18 -- 19 °C

Food pairings: An elegant and age-worthy wine, ideal with red meat, game, sauces and mature cheese
