Vinification: hand-harvested grapes are meticulously selected from the best bunches. Maturation and fermentation slowly happen in small white oak barrels, which impart depth and complexity. Natural second fermentation in the bottle and then slow aging on the lees for no fewer than 18 months

Aging: 4 years, 51% in pièces (228 L), 49% in inox tanks
