Region: Veneto, Italy
Grapes: Garganega and a touch of Goldtraminer
Vineyards: Located in Monteforte and Soave, on the Foscarino and Zoppega hills.
Soil: Volcanic tuff and calcareous soils.
Vinification: The ripest grape bunches are left to dry in a well-aired room, where they naturally develop noble rot by December. The grapes are then gently soft-pressed in a controlled atmosphere, before fermentation takes place in small Allier oak barrels.
Aging: 8 months in stainless steel vats.
Tasting Notes: Delicate and fruity aromas of almond and freshly baked cookies lead into a rich, creamy palate. Tropical fruit flavours of papaya and mango are complemented by hints of lemon, dried figs and apricot, creating a wine that is both luscious and refreshingly vibrant.
Food Pairing: Perfect with cookies, cakes, orange marmalade and aged blue cheese.
