<p>WINE MAKING Manual harvest, after the stalk removal and<br />
pressing the fermentation takes place at a controlled<br />
temperature of 32°C in steel rotary macerators. The duration<br />
of maceration is around 3 days. The malolactic fermentation is<br />
completed in November-December.</p>
<p>CLARIFICATION Egg white, gel bentonite<br />
CHARACTERISTICS Fruit is the dominant component of this<br />
wine and the nose detects cherry, sour cherry and mature<br />
pulpy fruit. It is a very intense ruby red in colour, and one<br />
immediately perceives its extraordinary richness in extracts.<br />
The taste is strong, potent and persistent over time; it is very<br />
smooth without bitter tannins, soft to the palate, so balanced<br />
as to render it exceptionally pleasing.<br />

CHARACTERISTICS An extremely pleasing and drinkable wine, and<br />
although it has a high alcohol grade this never overpowers its fruity<br />
character. Its red colour has Bordeaux reflections and the slow trickle<br />
from the edge of the glass confirms its optimal concentration and<br />
good body. The palate is caressed by a smooth tannin content typical<br />
of the Nebbiolo grape and by a warm and enveloping flavour.<br />
